The ultimate comfort food for fodmapping teens

Is your teen craving comfort food?


End of year exams, sport wind ups, work functions, etc. It all just seems to be piling on and there’s more than one member of my household that is craving comfort food, Netflix and a night on the couch. And that’s a perfect recipe for hassleback potatoes.


As long as you’ve got creamy-textured spuds or sweet potatoes, you’ve got the basics for this recipe covered. The rest is just decoration. We’ve used crispy bacon, sour cream, parmesan cheese, spring onions, green chilli and seasoning. But you pimp up your potatoes your way!

METHOD

1.    Pre-heat the oven.

2.    Slice the potatoes. Use chopsticks on either side of the potato and make deep vertical cuts without cutting through the potato. The chopsticks should keep you from accidentally cutting too far.

3.    Place the potatoes in an oven-proof dish and season liberally with salt, pepper, melted butter, oil and parsley. If you have a pastry brush, spread some melted butter in between the slices of each potato to guarantee extra crunch.

4.    Bake for 75 mins or until golden and crispy.
