Low fodmap bounty-licious bars

 

The original Bounty Bar created by Mars Inc is made up of a moist coconut filling, covered in milk chocolate. It’s definitely one of my favourite flavour combinations. And they’re easy to make at home. With just 4 ingredients, you’ll surprise your whole family with these low fodmap chocolate treats!


Ingredients:

  • 3 cups (250g) desiccated coconut

  • ½ cup coconut oil, melted (equivalent to 120ml when melted)

  • ¼ cup (60ml) maple syrup

  • 150g dark chocolate (70%+ choc)

Method:

  1. Measure the oil, maple syrup and coconut into a food processor and pulse until the mix holds together. Shape into 18 individual bars and place on a lined tray with baking paper. You can use chocolate moulds, depending on their size, or just hand mould them into bar-shaped logs (which is what I did). Without fruit, the coconut bars can be tricky to work with. My tip is to make rough balls with the coconut mix and then freeze for 5 mins so the mix is easier to shape into bars. The mix makes 18 x 16g bars (uncovered with chocolate) or 30g (once covered with chocolate). Transfer to the freezer for 1 hour, or until set.

  2. Melt the chocolate gently in the microwave in a narrow container, until just melted. The choice of jar is important when considering how you will dunk the bars. Is it wide enough to dunk & roll the bars horizontally? Or is it deep enough to dunk the bars vertically using a toothpick?

  3. Once the bars have set and the chocolate has been allowed to cool slightly, dunk each bar in the chocolate, return to the tray and allow to set. If you’re in a hurry, refrigerate until set.

  4. Decorate, if you wish, with chocolate drizzle, dried blueberries or coconut strands.
