Lamington protein balls

 

Introducing our delectable low fodmap Lamington Protein Balls - a tantalising twist on the classic Aussie treat! These delightful bites feature a rich chocolatey interior, coated with a generous layer of shredded coconut for that signature lamington taste. But wait, there's more! Nestled within each ball lies a delightful raspberry surprise, adding a burst of fresh raspberry sweetness with every bite. Crafted with low fodmap ingredients, these protein-packed goodies are not only delicious but also gentle on sensitive tummies. Indulge in these heavenly treats, perfect for satisfying cravings without compromising on flavor or digestive comfort!

Ingredients:

90g protein powder (Obviously, we’d recommend Superflora Plant-based Chocolate or Superflora Rich Cocoa Chocolate!)

60g almond meal

20g cocoa (I used Valrhona Dutch Cocoa because it’s luxuriously dark & delicious but you can use your favourite)

100g coconut oil, melted (equivalent to ½ cup when melted)

140g maple syrup (equivalent to ½ cup)

Filling & toppings:

20-25 frozen (or fresh) raspberries

30g 70% dark chocolate

20g coconut, desiccated

Method:

  1. Add the protein powder, almond meal and cocoa to a blender, before adding the coconut oil and maple syrup. Blitz until the mixture comes together.

  2. Allow the mixture to cool I the fridge for 10 mins for the coconut oil to firm up. This will make rolling the mixture into balls easier.

  3. While the mix is cooling, spread the coconut on a plate, gently melt the chocolate in the microwave and line a tray with baking paper in preparation.

  4. Scoop and roll the mixture into small balls. Add a frozen (or fresh) raspberry into the centre of the ball.

  5. Coat in choc and lightly roll in coconut.

This recipe makes 20-22 balls, depending on the size. My protein balls were about 25-28g without toppings and 28-30g once covered with chocolate & coconut. Store in the fridge.
