Low FODMAP Coconut and Zesty Lime Protein Balls

INGREDIENTS

2 cups shredded or desiccated coconut

1/2 cup Superflora French Bean Vanilla or Plant-based Vanilla gut health shake

1 lime, juice and zest

1/4 cup maple syrup

1/4 cup coconut oil, melted

1 tsp vanilla essence

extra coconut and/or lime zest for rolling

 

METHOD :

Add all ingredients into a food processor and blitz into a dough. Roll into balls and place on a lined tray in the fridge to firm up. Roll in the extra coconut and/or lime zest.

Makes 9-12 balls, depending on size. Yes, there is sorbitol in coconut but the recommended low fodmap serving size is 30g (or 1/2 cup) so people with fodmap sensitivities should be able to tolerate 1-2 balls per meal.
