Low FODMAP Sautéed Green Beans with Almonds

This is a delightful low FODMAP side dish. It is surprisingly quick and easy, but the addition of the almonds lifts the green beans to new heights.

Ingredients (serves 4 as a side-dish):

  • 300g green beans

  • 40g flaked almonds

  • 2 tablespoons of extra olive oil

  • garlic clove - whole and peeled*

Method:

Top and tail the green beans and cut into 2.5cm pieces.

Cook in boiling water for 2 minutes then drain.

Add the olive oil and the garlic clove to a frying pan and heat gently for a minute, then remove the garlic.

Add the almonds to the pan and fry for a minute or two until golden.

Stir in the beans and cook gently until beans are tender.

  • the FODMAPs (fructans) from the garlic do not permeate the oil.
