Low FODMAP Mediterranean Salad
This is a quick and easy salad, prepared in minutes. Simply combine all ingredients, add the dressing and serve with tuna, eggs, chicken or 42g of drained and rinsed canned chickpeas.

Ingredients (serves 1)
Salad:
40g feta cheese
75g cucumber (diced)
1 cherry tomato
¼ red pepper
fresh herbs
1 cup of Cos lettuce,
3 black olives,
1 cornichon
¼ teaspoon capers (chopped)
Dressing:
¼ tbsp red wine vinegar
½ tbsp extra virgin olive oil dressing
