Low fodmap salmon patties

INGREDIENTS
500g salmon, skinless, finely chopped
1 egg, whisked
20g (1/4 cup) Parmesan, grated (40g is the recommended low fodmap serving size)
30g (1/2 cup) panko breadcrumbs (75g is the recommended low fodmap serving size)
1 tbsp lemon juice, freshly squeezed
lemon zest
2 tbsp parsley, finely chopped
salt and pepper
AVOCADO SAUCE
1 medium avocado, peeled and pitted (the recommended low fodmap serving size is 60g or 3 tablespoons)
1/4 cup (80g) regular sour cream (the recommended low fodmap serving size is 40g or 2 tablespoons)
1 tbsp lemon juice, freshly squeezed
2 tbsp water, if you want a runnier consistency
Salt & pepper to taste
(for fodmappers, limit the sauce to one tablespoon per salmon ball to minimise sorbitol intake)
METHOD
Preheat the oven to 200C.
Add all ingredients to a bowl and stir gently. Form round patties and set aside.
Place patties on a lined tray and bake in the oven for 18 mins (or until golden)
Blitzed all sauce ingredients in a food processor and season to taste.
Serve with a green or Mediterranean salad.
