Low fodmap salmon patties

Low FODMAP salmon patties

INGREDIENTS

  • 500g salmon, skinless, finely chopped

  • 1 egg, whisked

  • 20g (1/4 cup) Parmesan, grated (40g is the recommended low fodmap serving size)

  • 30g (1/2 cup) panko breadcrumbs (75g is the recommended low fodmap serving size)

  • 1 tbsp lemon juice, freshly squeezed

  • lemon zest

  • 2 tbsp parsley, finely chopped

  • salt and pepper

AVOCADO SAUCE

  • 1 medium avocado, peeled and pitted (the recommended low fodmap serving size is 60g or 3 tablespoons)

  • 1/4 cup (80g) regular sour cream (the recommended low fodmap serving size is 40g or 2 tablespoons)

  • 1 tbsp lemon juice, freshly squeezed

  • 2 tbsp water, if you want a runnier consistency

  • Salt & pepper to taste

(for fodmappers, limit the sauce to one tablespoon per salmon ball to minimise sorbitol intake)

 

METHOD

  1. Preheat the oven to 200C.

  2. Add all ingredients to a bowl and stir gently. Form round patties and set aside.

  3. Place patties on a lined tray and bake in the oven for 18 mins (or until golden)

  4. Blitzed all sauce ingredients in a food processor and season to taste.

  5. Serve with a green or Mediterranean salad.
